Easy Peasy Profiterole Wreath

On the day before Christmas, I decided to bring dessert to my parents place, because I’ve only bought savoury edible gifts and nothing sweet. This Easy Peasy Profiterole Wreath was done in seconds, because you’ll only need a few ingredients: some store bought profiteroles, white/dark chocolate, your fave toppings and you’re all set. Also, ask the little people at your party to fix dessert. They’ll have a good time doing it and you don’t have to stress about dessert ;-)

Xmas Dinner for 2!

So, this year I wanted to come up with a million recipes for your Christmas dinner. Unfortunately, a lot happened and with lockdown No.3 whilst dealing with other stuff, I didn’t have time to work on as many recipes as I wanted. However, I did make a Christmas dinner for two (greedy persons ;-) consisting of a Chicken Roll stuffed with Cranberry Compote & Brie, Sweet Potato and Garlic Galette and Roasted Purple Brussel Sprouts. I shared this lovely meal with my two neighbours, who have become my good friends during this Pandemic. I guess, that’s the bright side of this whole drama; that we get to connect and reconnect with others and ourselves.

Roasted (Purple) Brussel Sprouts

I know sprouts have a bad name in the Netherlands and that’s probably because they were cooked through until they became snotty and unappealing. I’ve never really hated them because my mom either stir-fried or tossed them through a curry. They were really flavoursome! But you can do more with these mini cabbages by roasting them in the oven. This way they will become crispy and super yum! But first we will season them before we'll pop them in the oven. And after that, we will coat them in a marinade of honey and balsamic vinegar. Trust me you would want to try out these sprouts!

Sweet Potato & Garlic Galette

This staple of the French countryside works perfect as a side and accompanied with roasted meats. The outside is crispy because of the cheese and the inside is soft, buttery and perfumed with the garlic.

Chicken Roll w/ Cranberry Compote and Brie

This is Christmas in a Chicken Roll! It’s an ultimate stunner at your dinner and not hard to make at all. The sour cranberry compote works really well with the creamy cheese and the spices bring the whole dish together. Use the leftover juices to make a sauce by adding a little bit of butter and stock to the pan.

Coconut Rice Pudding (Vegan)

Rice Pudding is a classic dessert (or breakfast, lunch or dinner) for a reason. With some milk, sugar and spice this grain is an instant way to take you back to those fond memories with your grandmother/father (and some of you might have learned it from her as well). Anyways, I’m digressing as usual, but my take on this classis is just as comforting as grandma’s version, just as creamy and just as delish! It can be made vegan, with or without raisins and you can vary with the ingredients! So, check it out ;-)
