Xmas Dinner for 2!

So, this year I wanted to come up with a million recipes for your Christmas dinner. Unfortunately, a lot happened and with lockdown No.3 whilst dealing with other stuff, I didn’t have time to work on as many recipes as I wanted. However, I did make a Christmas dinner for two (greedy persons ;-) consisting of a Chicken Roll stuffed with Cranberry Compote & Brie, Sweet Potato and Garlic Galette and Roasted Purple Brussel Sprouts. I shared this lovely meal with my two neighbours, who have become my good friends during this Pandemic. I guess, that’s the bright side of this whole drama; that we get to connect and reconnect with others and ourselves.

This is Christmas in a Chicken Roll! It’s an ultimate stunner at your dinner and not hard to make at all. The sour cranberry compote works really well with the creamy cheese and the spices bring the whole dish together. Use the leftover juices to make a sauce by adding a little bit of butter and stock to the pan.
