Breakfast Sushi w/ Smoked Salmon & Omelette

Ingredients

- 1 cup of Sushi rice, cooked according the package instructions
- 100 gr of smoked salmon (finely chopped)
- 1 tbsp black, white or wasabi flavored sesame seeds
- 2 tbsp chives or 2 spring onions (finely chopped)
- 2 eggs (cooked as an omelette, finely chopped)
- 1 tsp sesame oil
- 1 tsp garlic powder
- salt & pepper to taste

For serving:
- extra sprinkle of sesame seeds
- nori sheets
- soy sauce
- Wasabi or Sriracha mayo (3 tbsp mayo + 1tsp wasabi or Sriracha)

Instructions

  1. Cook the Sushi rice according to the package instructions and let it cool down.

  2. Cook the eggs as an omelette (whisk them, season with salt & pepper and cook in two batches in a pan). Then chop the smoked salmon, omelet and chives or spring onions. Place these ingredients in a bowl and add the rice. Finely, season with garlic powder, sesame oil and salt & pepper to taste.

  3. With your hands form balls or triangles (I made 6 triangles). You can also wrap these in nori sheets to hold them together. Plus, I love the seaweed taste!

  4. Serve with soy sauce and Wasabi or Sriracha mayo and enjoy!
