Breakfast Sushi w/ Smoked Salmon & Omelette

Ingredients
- 1 cup of Sushi rice, cooked according the package instructions
- 100 gr of smoked salmon (finely chopped)
- 1 tbsp black, white or wasabi flavored sesame seeds
- 2 tbsp chives or 2 spring onions (finely chopped)
- 2 eggs (cooked as an omelette, finely chopped)
- 1 tsp sesame oil
- 1 tsp garlic powder
- salt & pepper to taste
For serving:
- extra sprinkle of sesame seeds
- nori sheets
- soy sauce
- Wasabi or Sriracha mayo (3 tbsp mayo + 1tsp wasabi or Sriracha)
Instructions
- Cook the Sushi rice according to the package instructions and let it cool down.
- Cook the eggs as an omelette (whisk them, season with salt & pepper and cook in two batches in a pan). Then chop the smoked salmon, omelet and chives or spring onions. Place these ingredients in a bowl and add the rice. Finely, season with garlic powder, sesame oil and salt & pepper to taste.
- With your hands form balls or triangles (I made 6 triangles). You can also wrap these in nori sheets to hold them together. Plus, I love the seaweed taste!
- Serve with soy sauce and Wasabi or Sriracha mayo and enjoy!
